We only work with producers on a short circuit and this ensures the traceability of the dishes and highlights local know-how.
What is important for us is to know our producers personally, their production, their specialties and listen to their suggestions. It's always a fun time to visit them.
Moreover, our Chef de Cuisine regularly visits them to taste the new products, find the flagship products or even conceptualize the menu by visiting.

As you can imagine, some of our products do not come from Switzerland. Unfortunately we are missing an ocean and some specialties from elsewhere. This is why, we choose our producers internationally just as we choose our producers in Switzerland. An eco-responsible and organic production, only natural and a lot of respect for nature and animals.
This is the promise we make to all of our customers.
